一、组织简介

我们组织是伴随着本人在大学食堂多年的工作经历成立的，目前我们组织由最初的几个人发展到现在十四人左右，由于我们多年在大学食堂工作，经常与大学生接触，我们理解学生的不满，且懂得学生的需求，站在学生的角度，解决学生最基本的饮食问题，立志做中国高校食堂第一品牌，专业经营高校食堂，秉承“诚信敬业，创新求实”的发展理念，以餐饮管理服务作为主要发展目标。

二、组织产品

我们组织主要经营各种面食、各种炒菜、炒米饭等特色快餐，以及临夏风味炒面、山西刀削面、西府削筋面等面食，还有山东杂粮煎饼、麦香馅饼、陕西腊汁肉夹馍等地方小吃

山东杂粮煎饼，采用小米、玉米、高粱、小麦、黄豆几种面混合使用，制成面糊，做出的煎饼，薄脆可口，含粗纤维多，能够清除体内垃圾，具备排毒养颜的功效，还能促进血液循环降血脂，健脾养胃促进消化，对吃腻了食堂饭菜的学生来说，就是一种健康食品。

土耳其烤肉饭，土耳其烤肉是利用十余种调料对牛、羊、鸡等肉类进行浸泡腌制后。采用旋转式烤肉机，电加热烤熟后从烤肉柱上一片片削下，佐以沙拉、配料装入特制的米饭上。烤肉在光热作用下，肉质鲜嫩，色泽油亮，香嫩可口，不油腻，营养均衡，令闻者口出欲出，食者口味留香。

麦香馅饼，挑选优质面粉及肉馅素馅作为食材，运用现代设备及独特的烤制技术，使出炉的馅饼色泽诱人，外酥内嫩，口感酥软，香气四溢，讲究营养饮食的心理，种类新颖，甜香、肉香、咸香、麻辣十几种口味一应俱全，令人留恋往返。

西府削筋面，削筋面的主要流行区域是宝鸡凤翔及毗邻地区，其他地方比较少了，地方特色十足。削筋面在和面的时候面要揉硬，然后擀厚，切成长短均匀的细条就好了，做好后吃起来非常筋道。削筋面具有筋而不硬，滑而不嫩，油而不腻，辣香爽口，咸酸适口，味道香醇，吃在嘴里爽滑立朗。

我们组织早餐供应：山东杂粮煎饼、腊汁肉夹馍、麦香馅饼、豆腐脑、豆浆、特色粥等。

中餐和晚餐供应：土耳其烤肉饭、煲仔饭、炒米饭、炒面、刀削面、炸酱面、拉面、菜盖面、户县软面、西府削筋面、罐罐面、老爸米线、汉中凉皮等。

三、组织构成和卫生制度

目前，我们组织由管事员、厨师、厨师助手、采购员、保洁员等组成，对我们组织人员，严格制定个人卫生制度，并且严格遵守学校食堂与学生集体用餐管理卫生规定。从食品原料的采购、清洗、深加工等严格按照《中华人民共和国食品卫生法》执行。实行“四不制度”。

1) 不采购腐烂变质的原料和成品。

2) 不接受腐烂变质的原料和成品。

3) 不使用腐烂变质的原料和成品。

4) 不出售腐烂变质的原料和成品。

不采购、不使用无生产日期，无保质期，无生产厂家的“三无产品”。对超过保质期产品要及时处理。

四、组织远景

经过几年的辛勤努力，我们组织积累了丰富的经验，餐饮集团化初具规模，在餐饮服务方面具有下列优势：

1、在“诚信敬业，创新求实”理念的指引下，“爱岗敬业、乐于奉献”的组织文化已经深入员工的内心，在这样的环境下吸引了大批优质的人才，为客户提供优质的餐饮服务打下坚定的基础。

2、规范化的管理：参照5S和ISO管理系统，进行工作岗位定职定责，奖罚分明，定期的对员工培训和素质教育、礼仪及卫生知识培训，在经营过程中探索出一条适合餐饮管理服务特色的“3+1模块管理”模式：3大模块是指：厨房管理模块(保证菜品创新)、采购模块(保证物美价廉)、员工服务模块(定期培训、定期考核，保证高效的服务)，1个激励目标：顾客满意度目标考核办法，避免以利润为导向的考核陷阱。

3、保证食品的安全、卫生、保证员工队伍素质。

4、形成科学合理的物流管理体系：为了能让顾客得到物美价廉的满意服务，我们直接购买无污染、无公害的新鲜蔬菜和绿色食品。为了节约成本，组织除自己拥有的采购车队之外，还与物流公司联合保证顾客及时得到新鲜的菜肴和食品。

5、完善的监督考核体系：做为餐饮行业最重要的核心竞争力，我们拥有严格的和完善的质量保证措施，使我们每个生产环节都处在监督管理之下，确保食品安全、食品合理搭配。

我们组织从成立最初本着“没有安全就没有一切” 的价值观，踏实勤恳、认真负责、坚守承诺的态度，为亿万学生提供干净卫生、美味可口、经济实惠、营养健康的食品，立志做中国高校食堂第一品牌。
